Carnitas Tacos

3-4 lb pork shoulder, butt, or roast

8 cloves garlic, whole

3c orange juice

1 can Pepsi

2 bay leaves

Salt and pepper to taste

Insert whole cloves of garlic throughout the roast (they will melt into the meat during cooking). Brown all sides of meat. Line baking dish with foil or place browned roast in a dutch oven. Cover with foil. Cook at 325 for 2.5-3 hours or until the meat can be easily shredded with a fork. Serve in tortillas with corn salsa, red chili sauce, salsa fresca (tomato, chopped cilantro, juice of a lime, onion), avocado, and whatever other fixings you choose.
